Zucchini bread is a delicious and healthy bread recipe made with zucchinis. Here’s a simple zucchini bread recipe:
Ingredients:
- 2 cups grated zucchini
- 3 eggs
- 1 cup milk or yogurt
- 1/2 cup vegetable oil (preferably olive oil)
- 2 cups whole wheat flour
- 1 cup all-purpose flour
- 1 packet baking powder
- 1 teaspoon salt
- 1 teaspoon black pepper (optional)
- 1 teaspoon thyme (optional)
- 1/2 cup grated cheddar cheese (optional)
Instructions:
- First, place the grated zucchini in a bowl and sprinkle with a little salt. Let it sit for about 10 minutes. This process will help remove excess water from the zucchinis and regulate the texture of the bread.
- Squeeze out the excess water from the zucchinis and transfer them to a mixing bowl.
- Add the eggs, milk or yogurt, and vegetable oil to the zucchinis, and mix well.
- In a separate bowl, combine the whole wheat flour, all-purpose flour, baking powder, salt, and optionally, black pepper and thyme. Sift these dry ingredients into the zucchini mixture and stir with a spatula or wooden spoon.
- If desired, you can also add the grated cheddar cheese to the mixture.
- Pour the prepared zucchini bread batter into a greased or parchment-lined bread loaf pan.
- Bake in a preheated oven at 180°C (356°F) for about 40-45 minutes or until the bread turns golden brown. Check the doneness by inserting a toothpick or a knife into the center of the bread.
- Once the zucchini bread is baked, remove it from the oven and let it cool slightly at room temperature.
- Slice and serve the zucchini bread, optionally garnishing it with fresh greens.
